This has been one of my favorite salads lately. It’s simple, colorful and is the best combination of flavor and textures.
Winter Kale Salad
- 6 cups torn kale leaves *packed*
- 1/4 cup olive oil
- 1 lemon *juiced*
- 1 cup sliced radishes
- 1/2 cup shaved sheep’s gouda
- 1 cup walnuts
- 1/4 cup honey
- 1 tbsp olive oil
- 2 tbsp sesame seeds
Directions
- Set your oven to 350 degrees. Toss your walnuts with olive oil, honey, sesame seeds, sea salt and pepper. Roast for 6-8 minutes.
- Massage the kale leaves in a bowl with olive oil and lemon juice. Season with salt and pepper.
- Top with sliced radishes, shaved gouda cheese, and honeyed walnuts.
