Peach Berry Olive Oil Sauce

I love putting olive oil on ice cream. I know it’s a new thing and not everyone likes it but I find the flavor combination to be so good! This sauce is a mix of a berry and peach compote with olive oil drizzled in. The word luxurious comes to mind especially when I am thinking of high quality olive oil. I love how vibrant this sauce is as well and it pairs so well with vanilla ice cream or served on top of your morning yogurt.

Ingredients

  • 2 peaches (peeled + diced)
  • 1 cup blackberries
  • 1 cup raspberries
  • 1/2 cup honey
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • pinch sea salt
  • 1/4 cup olive oil

Directions

  1. Bring a large pot of water to a boil. Score the tops of the peaches and add to the water for about 1 minute. Remove from the water and let cool.
  2. Peal the peaches and then cut up into small pieces. Add to a sauce pot with the raspberries, blackberries, honey, cinnamon, sea salt and lemon juice.
  3. Bring the peach and berry mixture to a simmer and let cook for about 20 minutes until berries begin to burst and sauce slightly thickens.
  4. With a mesh strainer, strain the sauce into another bowl so all seeds are removed. Drizzle in the olive oil and stir. Serve warm or save in your fridge for later.
